We were busy this whole entire weekend, doing different things each day starting on Friday, and it was so much fun! Me and Jordan went out on a "date" to Iggy's for dinner. It was so nice to just be us two out and about and we really enjoyed our meals! It was funny, it took me like 20 minutes to figure out what I wanted, and all I ended up ordering were chicken fingers. Ha! But they were great! Our great friend Amber (more like a sister to Jordan) was in town, so she and a bunch of our other friends came over Friday night to visit and watch Sherlock Holmes (GREAT movie I might add). It was so much fun to see her and catch up. Now that she's moved to CA, I rarely get to talk to her! Unfortunately, we were too busy chatting to take any pictures. Sad. But like I said, it was great to see her.
Saturday I woke up early and did a bunch of cleaning around my house and then my parents called and said they were heading out to the Knolls to go four-wheeling and they bought a standing fire pit thing to roast hot dogs and make smores, so we decided to head over with them for the day! It was freezing, but sooo much fun. My dad decided me, him, and Jordan were going to play follow the leader on some of the trails and he lead us up and down some pretty crazy hills! I'll admit, there were a few times I lost control of my four wheeler and had to put my feet down in order to not go tumbling down the mountain, but it was still fun! It was a rush being all adventurous and such haha. My dad was braver than I was a few times and he would drive up a hill, BARELY make it, and I would just be at the bottom shaking my head NO. hahaha Good times. It was really fun riding over to the dunes and salt flat areas. Going up, over, and around all those hills was a blast (except for Elise, who didn't listen to my dad when he said to slow down when you get to the top of a hill to make sure you know what's on the other side....yeah she crashed and is lucky she didn't break anything haha, just a minor injury to the four-wheeler and bruising) and then on the salt flats you could pretty much go as fast as you could because it was completely flat. That was awesome! But FREEZING cold with that wind hitting your face so fast. We drove way out in the salt flats to this post where they have markers for you to sign your name and stuff. It was fun. After riding all over the place, we loved coming back to the warm fire and roasting hot dogs and marshmallows! Yummy! Then we headed back home to shower and go out to dinner with the family. I had a steak and it was sooo good. It's been a while since I've ordered one and I was craving it! After dinner, me and Jordan came home and watched Boondock Saints 2 which was good also, not quite as good as the first one, but that's ok. I pretty much fell asleep right after that because I was exhausted from a long day.

Sadie didn't like sitting in the backseat by herself and kept leaning on Jordan's arm to be part of the group haha.

Easter Sunday was a great day. I woke up way before Jordan because he likes to play video games until all hours of the night, so I did some more tidying up around the house and a load of laundry while I waited for him to get up. Once he woke up, I decided to make deviled eggs (for my first time I might add) as a little snack before I started an early dinner/late lunch, however you want to look at it. I never liked them growing up, but Jordan has been warming me up to eggs in general since I've known him and so I decided to try them again, 15 years later haha. I loved them! I thought they turned out really good. They weren't the most pretty looking...I do not have a talent for pretty hard boiled eggs, but they at least tasted good. After our snack, we started making manicotti together. I love when we cook together, it's so much fun. Jordan doesn't always like to, but today he was more than willing to! It was great! The manicotti turned out FABULOUS, probably our best batch ever. Then it was straight to making homemade apple pie! It was my first time making apple pie as well, and I had to make two pies since my family was coming over to have some. It took me a long time to peel and slice all the apples, but other than that, it really wasn't bad at all. And it was DELICIOUS. I've had this recipe before, I got it from a friend, but it was my first time making it. It's my favorite apple pie recipe I've ever had by the way. It's soo yummy. It has a crumb topping, my favorite. I love pies with crumb toppings!! My family loved it too, I only have two pieces left out of two pies! Thank you Becca for the recipe! Basically I was either cooking or baking all day, but it was great. Since me and Jordan are counting calories again, I've pretty much only been eating Lien Cuisines and Progresso soups for the last two months, so it was nice to eat a real meal and dessert for once! I savored each bite. haha


I made her pose by her stuffed animal, but she just wanted to kill it the whole time! hahaha After the picture I gave her the ok. :)

She hung out upstairs with me all day while I cooked. I kept hearing her growl every so often and when I looked up, this is where I found her. She LOVES looking out the window at the neighborhood. There happened to be another doggie outside that she didn't seem to like haha. She's so tough.

My kitchen is coming together so well finally! You can't see it in this picture, but it's turning out really cute. I'm going with an "Italian" theme. One of these days I will take a picture of the complete kitchen.
